HOW TO COOK UGALI with BEEF

Ingredients​

3 servings
  1. 750 g beef
  2. chopped sukumawiki
  3. 3 tomatoes
  4. spring onions
  5. Vegetable cooking oil
  6. salt
  7. Unga ya Ugali./ flour
  8. 6 Irish potatoes
  9. 1 tsp Curry powder

Steps​

  1. Chop the beef into smaller pieces then wash and put in a cooking pot over medium heat. Add some water and salt that will be enough to cook the beef till tender.

  2. Meanwhile chop the sukuma wiki in to thin slices. Then chop the tomatoes irish potatoes and onions.

  3. When the beef is tender and water diminished, add the oil and onions the allow to cook for 5 mins. Then add tomatoes, stir to mix well then allow again to cook for till well mixed.

  4. Add little water for soup, potatoes and curry powder. (the water should be enough to cook the potatoes till soft or tender) cover to cook for 15 minutes

  5. After the beef is cooked, steam the sukuma wiki with salt. Then cook Ugali with flour and serve

Ingredients For Beef Stew​


  • Beef (cut into cubes)

  • 2 zucchini (cut into strips)
  • 1 large onion diced
  • 2 cloves of garlic minced
  • 1 capsicum shredded
  • Water or beef stock
  • Salt to taste
  • Fresh coriander
  • Black pepper
  • Other seasoning that you like
  • Oil to fry

Ingredients For Steamed Cabbage​


  • ¼ shredded head cabbage
  • 2 Grated carrots
  • 1 clove of garlic minced
  • Butter or margarine
  • Salt to taste

Directions on cooking AMAIZE premium sifted maize meal ugali​


  1. Put water to boil. Once it has boiled start adding the AMAIZE, turning it until it starts to thicken. Continue stirring because if you stop, lumps will form and your ugali won’t taste good.
  2. Once you attain your desired thickness (this depends on how hard you like your ugali) continue turning it with a mwiko (wooden spoon or stick) giving each side sometime to cook. Cooking AMAIZE usually takes 10 minutes.
  3. Once your ugali is done, turn it over into a hot pot and keep warm until ready to serve.
